연근조림
Candied lotus root slices are a delicious sweet treat or great addition to a ban chan array.
Ingredients
8 ounces lotus root
2 cups water for boiling
1 tablespoon salt
1 tablespoon sugar
½ teaspoon white sesame seeds
1 tablespoon lemon juice
1 teaspoon honey
½ teaspoon sesame oil
½ cup of water
Directions:
Prepare the Lotus:
- Fresh –
- If using whole root – Wash and peel the root.
- Whole or sliced – Heat water to boiling, add lotus root and salt.
- Reduce heat to low and simmer for 20 minutes.
- Remove from heat, drain, and cool.
- Whole – After boiling and cooling, carefully cut the root (root may be tough) into approximately 1/8 to 1/4 inch slices.
- Dried –
- Completely submerge in water.
- Allow to soak from 2 to 4 hours.
- Pour of excess water and drain thoroughly.
- Bring 2 cups water to a boil then add salt and lotus root.
- Reduce heat to low and simmer for 20 minutes.
- Remove from heat, drain, and cool.
Melt the sugar over low heat until it begins to caramelize.
Add 1/2 cup water and lemon juice and return to a simmer.
Add sliced lotus and simmer until liquid is nearly gone.
Remove from heat and cool.
Serve:
Dress with honey, sesame oil, sesame seed and serve.
