Korean Fusion: Kalbi Burgers kalbi beogeo 칼비 버거

Kalbi is one of the most popular of the Korean BBQ meats. Typically thin strips of beef short ribs, the meat is marinated in salty/sweet mixture of soy sauce, sweetener, and sesame oil, then grilled quickly over high heat. The exact marinade varies by restaurant or home cook, but always incorporates salty/sweet/savory. This recipe takes the basic Kalbi idea to a ground beef preparation. In patty form, grilled or fried, on a burger or sandwich bun, with typical (or not so typical) burger toppings, this is a great way to meld Korean flavors with an American standard.

Ingredients

2 pounds beef short ribs (English cut)

6 Burger Buns/Sandwich Rolls

3 red chili peppers

3 green chili peppers

Marinade

1/4 cup natural brewed soy sauce

1 tablespoon roasted sesame oil

2 tablespoons honey

2 teaspoons rice wine

1 slice onion (about 1/8 inch thick or 1/2 ounce)

2 tablespoons plum extract

4 cloves garlic

Topping Suggestions

onion slice

tomato slice

red or green leaf lettuce

sliced cucumber

par boiled bean sprouts

perilla leaves

crown daisy leaves

leaf spinach

Directions

Have your butcher or meat counter grind the rib meat for you OR

Remove the rib meat from the bone(s) and rinse well in cold water.

Grind the meat.

Remove the stems from then mince the chili peppers.

Place all marinade ingredients in a blender and liquefy.

Mix the marinade and the minced peppers with the ground meat and let stand at least 1/2 hour.

Form into 6 equal sized patties.

Grill or fry to your preferred “Done”.

Place cheese on top the patties just before removing from heat.

Place on bun or roll and top with you choice of toppings.
