White Sauce

23 cups Water

1 cup Shaoxing Cooking Wine

1/2 cup chicken base (commercial product)

10 ounces Sugar

5 ounces Salt

1 tablespoon garlic powder

1 tablespoon white pepper

1/4 cup sesame oil


Combine all ingredients except sesame oil in a large container and mix well.

Pour mixture into a large sauce pot and bring to a boil over high heat.

Remove from heat, add sesame oil, and stir.

Transfer to a large storage container and let cool 45 minutes.

Cover and refrigerate.
