  • 1/2 teaspoon chili powder (optional for heat)
  • 2 cups cooked Beef pieces, shredded (you can use leftover rotisserie Beef pieces)
  •  1/2 cup tomato sauce
  • Salt and pepper, to taste
  • 1/2 cup frozen peas, thawed
  • 1/2 cup grated cheese (cheddar or mozzarella works well)
  • 1 egg, beaten (for egg wash)

Instructions:

Make the Dough:

  • Mix Dry Ingredients: In a large bowl, whisk together the flour and salt.
  • Add Butter: Add the cold butter pieces to the flour mixture. Use a pastry blender or your fingers to mix until the mixture resembles coarse crumbs.
  • Add Wet Ingredients: Beat the egg lightly and mix it with the ice water. Gradually add this to the flour mixture, stirring until a dough forms. Add more ice water, a tablespoon at a time, if the dough is too dry.
  • Knead and Chill: Turn the dough onto a floured surface and knead gently. Shape it into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 1 hour.

Prepare the Beef Filling:

  • Cook Aromatics: In a skillet over medium heat, heat the olive oil. Add the onion and garlic, cooking until soft and fragrant.
  • Season: Stir in the cumin, paprika, and chili powder (if using), cooking for another minute.
