2. Thai dried chili peppers are then roasted in a hot skillet on the stove until fragrant. The roasted peppers are then pounded and mashed together with the roasted shallot, garlic, and galangal in a mortar and pestle.

3. After the roasted components have been pulverized, palm sugar, tamarind juice, salt, and fish sauce are added. The mixture is then ground until it resembles a paste.

4. When the paste is done, the cooked pork or buffalo skin is cut into half-inch strings and combined with the paste in a large mixing bowl. 

5. After mixing, you already have Jaew Bong, which can be served with grilled pork, vegetables, or sticky rice!
