A refreshing drink made from Maesil (Japanese Plum) that can be served hot or cold.

Ingredients

pound

Maesil (Japanese plum/Ume)

1

pound

sugar

 

 

Procedure

Wash the plums thoroughly in cold water, remove stems, and wash again.

Dry the plums completely.

Place a layer of plums in the bottom of a jar, layer with some sugar, and repeat, ending with a final layer of sugar.

Seal the jar, place in a cool area, and let stand for one week.

Place the jar in the refrigerator and let stand for three to four weeks or until the plums shrink and wrinkle.

Strain the resulting liquid into another container, seal, refrigerate, and let stand another two weeks.

Making Tea:

Place one or more tablespoons of the Maesil juice into a cup of hot or cold water and enjoy.
